my first homebrewed lager, doppelbock is a malty strong beer that was brewed by medieval monks in germany to drink during Lenten fasting, believe it or not. this was also my first batch of beer in which I used gyle to prime the beer for bottling instead of priming sugar. that means I set aside a small amount of sweet wort before adding yeast, and then added it back to the finished beer before bottling so that there’s some sugar to ferment and cause carbonation. It worked great and the beer is delicious.
